Bread is at the heart of what we do.

Sweet Thea Bakery is an independent artisan bakery in Vancouver, baking naturally leavened breads and handcrafted pastries from scratch every day. We work exclusively with organic, locally milled flours—including heritage and ancient grains—and believe that exceptional bread comes from patience, attention to detail, and a commitment to continual learning.

We are looking for an experienced Head Bread Baker to lead and continually refine our bread program.

This is not an entry-level position. We're looking for someone who has dedicated themselves to the craft of artisan bread baking and wants to continue growing.

If you're the type of baker who studies fermentation, enjoys discussing flour varieties, and is always searching for ways to improve yesterday's loaf, we'd love to meet you.

The Position

You will oversee our daily bread production while working closely with our production team to maintain and continually improve quality and consistency.

Our daily production includes:

Naturally leavened sourdough breads
Baguettes
Focaccia
Ciabatta
Brioche
Rugbrød
Support for our pastry program, including croissants, scones and other handcrafted products

Daily bread production is approximately 80–120 loaves, with additional pastry preparation and next-day bake support.

Bread Is Never the Same Twice

We don't believe great bread comes from following recipes.

Temperature changes.
Humidity changes.
Flour changes.
Fermentation changes.

Every day presents a slightly different bake.

We're looking for someone who understands why those changes occur and has the judgement and confidence to adjust mixing, fermentation, shaping and baking accordingly.

The best bakers aren't simply following yesterday's process—they're constantly reading the dough.

We're Looking For Someone Who...

Has significant commercial experience producing naturally leavened artisan breads from scratch.
Is confident mixing, fermenting, shaping, scoring and baking sourdough breads independently.
Has experience working with long fermentation schedules and naturally leavened doughs.
Has excellent oven management skills and consistently produces high-quality results.
Notices small details in colour, crumb structure, fermentation, hydration and dough strength.
Communicates well and enjoys working in a small, collaborative team.
Takes pride in producing beautiful food every single day.

Extra Credit

We are especially interested in bakers who have:

Worked in respected artisan bakeries.
Taken professional baking or sourdough courses.
Completed stages or internships to broaden their skills.
Studied bread outside of work through books, workshops or continuing education.
Experimented with different flours, starters, hydrations and fermentation methods.
A genuine curiosity about the science of bread making.

We're looking for someone who understands not only how to make great bread, but why great bread works.

Schedule

Wednesday–Sunday

5 AM – 1:00 PM

Monday & Tuesday off

Early mornings aren't for everyone—but many bakers love the quiet focus, the rhythm of the work, and the satisfaction of seeing customers enjoy bread that's only hours out of the oven.

Compensation

$30.00 per hour
